Still with the idea of reducing my food waste by using all the vegetables, I had previously talked to you about using carrot tops. I wondered how I could use my sweet potato peels? By making Cajun sweet potato peel chips.
You've probably already seen this recipe elsewhere, so it's not particularly original. The recipe is really very easy to make, and it would be a shame to throw your peelings in the garbage can. It's so easy to make that I even made it while camping on a small stove. We ate fajitas with sweet potatoes in them. Instead of throwing away the potato skins, I made chips out of them. It was perfect for an aperitif.
The recipe calls for sweet potatoes. But it also works with regular potatoes or carrots. Maybe even other vegetables, but I've only tested these three. If you have any good tips, let me know I'm curious to try them.
For spices, I really like Cajun spices or chipotle. Both of these spices have a lot of flavor, but are also very spicy. If you want something without spice, you can try replacing the cajun with paprika, a BBQ spice blend or no spice at all.
In short, let your imagination run wild.

Description
An effective way to use up your sweet potato peelings rather than throwing them away.
Ingredients
- Peelings from 3 large sweet potatoes (about 80 to 100 g)
- 30 ml (2 tablespoons) olive oil
- 5 ml (1 teaspoon) Cajun spices
- A large pinch of salt
- water
Instructions
- Soak sweet potato skins in a bowl of water for about 10 minutes.
- Ideally, drain, rinse and dry the peels well. When I have time, I sometimes let them air-dry for a day. Otherwise, I use paper towels.
- Place peel, olive oil and spices in a dry bowl.
- Mix by hand to coat all peels with oil and spices.
- Arrange on a baking tray lined with baking paper.
- Bake in a preheated oven at 400°F (200°C) for approx. 20 minutes. Toss or turn peels slightly halfway through cooking.
- Sprinkle with a good pinch of salt and serve immediately.
- You can store them in an airtight dish for about 1 week.
Notes
You can use potato or carrot peels to replace the sweet potato peel.
You can replace the Cajun spices with chipotle if you like it spicy. If you prefer no hot pepper, you can use paprika or BBQ spices.
