This week, on February 2, it's Chandeleur. After the month of the galette des Rois, it's time to make crêpes. For the occasion, here's my recipe for crepe batter. I use it mainly for sweet crêpes (with strawberry jam, my favorite), but the recipe can also work for savory crêpes, although I prefer buckwheat crêpes for the latter.
Here's my family recipe for pancake batter!
Pancakes really are one of the easiest and quickest recipes to make. You can garnish them as you wish. Sweet: strawberry jam, chocolate spread, banana chocolate or simply powdered sugar. Savoury versions: ham, cheese, egg, goat's cheese, spinach... The only limit is your imagination, and good taste.

Ingredients
- 250 gr Flour
- 500 ml Milk
- 3 eggs
- 8 gr vanilla sugar
- 60 ml amber rum
Instructions
Preparing the dough
- Pour the flour (250g) and vanilla sugar (8g) into a large mixing bowl.
- Pour in half the milk (250 mL) a little at a time, stirring with a whisk.
- In a bowl, beat the eggs (3).
- Pour the eggs into the bowl containing the flour and milk.
- Pour in the remaining milk while whisking.
- Add Rum (60 mL)
- Leave the dough to rest in a cool place for 30 minutes.
Cooking
- Heat your frying pan (medium/high heat)
- Once hot, drizzle with oil or butter to prevent the dough from sticking during baking.
- Using a ladle, pour the batter into the pan, making sure to spread it evenly over the surface.
- Once the edges begin to brown, flip the crepe over.
- Leave to cook for 1-2 minutes.
