But I also wanted to improve it a little. The main drawback of marble cake is that it often ends up a little too dry, to the point that if you eat it too quickly like I did, you can choke a little. So I set out to make an even softer, less dry version.
The good news is that you can easily recreate this delight in your own kitchen with this easy-to-follow recipe. Here's what you'll need:
Ingredients:

- 230 gr caster sugar
- 120 g milk
- 220 g flour (T45 or T55)
- 2 teaspoons baking powder
- 160 g butter
- 100 g dark chocolate
If you don't have dark chocolate, you can use milk chocolate, in which case reduce the amount of sugar to around 150-180g, as milk chocolate is already sweet.
As an option, you can also make a syrup to soak the cake and make it less dry. I don't always do this, but if you want to, you'll need the following ingredients:
- 5 cl water
- 15 gr caster sugar

The recipe is quite simple. The idea is to make two batches of the same preparation. The only difference between the two preparations is that vanilla is added to one and chocolate to the other.
Once these two preparations are ready, all that's left to do is to draw your marbling by alternating layers of these preparations. With a little skill, you can even make some very pretty shapes.
Recipe is for a large Savannah cake. You will need a mould approx. 28 cm by 13 cm. But you can also make savannahs in individual format. For this you will need smaller molds. Don't forget to reduce the baking time, as small cakes bake much faster than large ones.

Marble dough
- 4 egg(s)
- 230 g powdered sugar
- 120 g de clait
- 220 g wheat flour
- 2 c. teaspoon baking powder
- 160 g semi-salted butter
- 100 g of dark chocolate
Syrup for soaking
- 5 cl water
- 15 g powdered sugar
Instructions
- Preheat oven to 165°C.
- Butter and flour your baking tin.
- In a bowl, mix 2 eggs with half the sugar (115 g).
- In a second bowl, combine 2 eggs and the remaining 115 g sugar.
- Add half the milk (60 g) to each bowl.
- In each bowl, add half the flour (110g) and half the yeast (1 teaspoon).
- Mix the contents of both bowls well.
- In a bowl, which will be the "plain" bowl, add half the melted butter (80g) and mix again.
- Melt the chocolate in a bain-marie with the remaining butter (80g), then stir into the second bowl, which will be the "chocolate" bowl.
- Pour a third of the batter from the "plain" bowl into your cake tin.
- Smooth the surface with a spatula.
- Add half the dough from the "chocolate" bowl and smooth again.
- Add another third of the plain dough and smooth.
- Add the remaining chocolate paste and smooth.
- Finally, add the remaining plain dough and smooth.
- Place in the oven for approximately 50-60 minutes.
- Optional: If you want to add syrup. Add the sugar and stir to make a syrup.
- Optional: Immediately after removing from the oven, brush the surface of the cake with this mixture.
- Leave your cake to cool, then turn out onto a wire rack.
