The problem with spending time on YouTube or Instagram is that sometimes you come across recipes that look really good. So good that you decide to reproduce them yourself. That's what happened with this recipe for delicious blueberry muffins I saw from Xavier Pincemin on YouTube.
The reason this recipe intrigued me was the use of egg whites in addition to whole eggs. I'd never seen this in a muffin recipe and was very curious about the result.
In the end, it works very well and I think it gives a softer, airier texture to the muffins. To validate this theory, I'd have to repeat the same recipe, but without those egg whites to compare.
I don't think I've ever had muffins this good! However, probably because I used frozen blueberries that had lost some of their flavor, I preferred my chocolate version.
Variants and substitution.
The recipe is for delicious blueberry muffins, but you can replace blueberries with other toppings like chocolate or berries.
Simply replace the blueberries with your filling when you add them to the dough before baking.
When it comes to baking, be careful not to overcook the muffins, as this will leave them fluffy. If you overcook them, you'll get a slightly crispy crust on the outside, which gives them a certain character, but isn't to everyone's taste.

A delicious blueberry muffin recipe that's easy to make at home. Can also be made with other toppings.
Ingredients
- 250 gr butter at room temperature
- 250 gr caster sugar
- 3 whole eggs
- 30 cL whole milk
- 25 gr baking powder
- 500 gr flour
- 4 egg whites
- 300 gr of blueberries
- 2 vanilla beans
- Optional: Blueberry coulis
Instructions
- Mix the butter with the caster sugar in a large bowl. The mixture should be smooth, like butter.
- Add the whole eggs and mix to a smooth paste.
- Add the vanilla beans
- Add flour, mix well
- Add milk, mix well
- Add the egg whites.
- Add baking powder
- Add blueberries
- Prepare your muffin tins
- Pour the dough into the moulds, but don't put too much in, as the dough will swell when cooked.
- Bake at 190 C (375 F) for 15 minutes.
