Stop throwing away carrot and sweet potato peelings
If you're familiar with my recipes, you've probably noticed that I use carrots or sweet potatoes a lot. They usually need to be peeled, and it always hurts me a bit to throw away these vegetable skins, which are often full of good nutrients.
To avoid this, I had suggested some recipes for sweet potato peel chips or potatoThis works for sweet potato peelings, but not so well for carrot peelings.

But thanks to Jean François Piège's great book, Zéro Gaspiwhich I recommended as Christmas presentI was able to try out a recipe for carrot and sweet potato peel cake. And it's just delicious! I've changed the basic recipe a little, which I find a little too fatty, but it's still very tasty.
So far, I've tested this cake using only shower potato peelings, only carrot peelings and a mixture of the two. It all works. If I find other ingredients to reuse in it, I'll update the recipe.
How to eat this peel cake?
This savory cake can be enjoyed as an aperitif. Cut into small pieces and serve on a plate with a toothpick. A bit like a zucchini and goat's cheese cake, or a bite-sized piece of bread with cheese.
It can also be eaten as a main course, and served as my lunch for several days. Add a simple green salad to serve and you've got a great meal in front of you.

Today I'm sharing a new anti-waste recipe with you: carrot and sweet potato peel cake, an anti-waste recipe.
Ingredients
- 250 gr peelings (carrot and/or sweet potato)
- 250 gr flour
- 17 gr baking powder (baking powder)
- 150 gr grated sharp cheddar (or Emmental) cheese
- 5 eggs
- 185 gr milk (or oat milk)
- 150 gr olive oil
- 7 gr of salt
- 1 tablespoon thyme.
Instructions
- Place all the dry ingredients (flour, baking powder and salt) in the bowl of a food processor.
- Add liquid ingredients (cheese, egg, milk, olive oil).
- Whisk together at medium speed.
- Add the peelings and thyme.
- Mix well.
- Prepare a cake tin, greasing it with butter and flour so that it doesn't stick when unmolded.
- Fill the mould with the mixture.
- Bake for 35-45 minutes at 170 degrees Celsius (or 370 degrees F)
