Like the last weekWe're staying with the peanut theme, but moving to a completely different continent. We're off to Africa for a recipe for peanut soup. The recipe stands on its own, but if, like me, you're not a big fan of soup, you can try it with semolina. It makes a more complete dish, and still tastes just as good.
What is peanut soup?
Peanut soup is a traditional West African dish. Like many traditional dishes, you'll find different versions in different countries and regions. The base is peanut butter and tomatoes.
Then, various vegetables can be added. These include sweet potatoes, eggplants, corn, beans and even meat, mainly chicken.
Although this soup can be enjoyed on its own, it is most often served with rice or millet. I personally like to serve it with semolina.
Peanut soup, a vegan, dairy-free dish
This recipe is suitable for a variety of diets. It is vegan and dairy-free. Something rare in the dishes I make.
But don't let that make it a tasteless recipe. Far from it. There's plenty of flavor between the coriander, peanuts and spices. The mix of texture between the creaminess of the peanut butter and tomatoes and the crunch of the whole peanuts is also very interesting.
All this makes for a healthy, balanced dish. Just be careful about the peanut butter you use, aim for the most natural product possible.
An easy-to-make dish
The final reason I love this dish is its simplicity. As is often the case, the hard part will be cutting up all the ingredients.
Then, simply sauté the onion before adding all the other ingredients, and leave to simmer for around twenty minutes. It's almost like a "one pot pasta".
This will give you time to cook your semolina or rice to accompany the dish.
Variants
Sweet potatoes can easily be replaced by potatoes, yam, butternut squash... And you can even mix a bit of all of the above.
This recipe can also be used to make use of vegetables lying dormant in the fridge. If you have peppers, eggplant, peas... you can add them rather than throwing them away.
For the carnivores among you, chicken or beef can also be added.

Ingredients
- 1 tablespoon coconut oil (or olive oil)
- 1 onion, chopped
- 3-4 garlic clove
- 1 tablespoon chopped ginger
- 1 teaspoon smoked paprika
- ½ teaspoon black pepper
- 1 teaspoon ground coriander
- 1 teaspoon of Ras el hanout
- 1 teaspoon ground cumin
- 2 cups sweet potatoes, diced
- 1 can chickpeas, drained
- 2 tablespoons tomato paste
- 1 cup diced tomatoes (approx. 1 large tomato)
- 4 cups (1 L) vegetable broth
- 1 cup no-sugar-added creamy natural peanut butter
- 1 teaspoon salt
- 1 tablespoon cider vinegar
- 250 baby spinach gr
- Coriander
- Crushed peanuts
Instructions
- In a large saucepan over medium heat, start sautéing the coconut oil, onion, garlic and ginger.
- Add smoked paprika, black pepper, coriander, ras el hanout and cumin.
- Stir for about 7 minutes or until the onions soften.
- Add the sweet potatoes, chickpeas, tomato paste, diced tomatoes, stock, peanut butter and salt.
- Bring to the boil and simmer for 20-30 minutes, or until sweet potatoes are tender.
- Add apple cider vinegar and salt to taste.
- Turn off the heat and stir in the baby spinach.
- Serve with crushed peanuts and fresh coriander.
- Optional: serve with semolina.
Notes
If you like your food a little spicy, you can add fresh chilli pepper or red pepper flakes before bringing your pan to the boil.
