In Quebec, it feels like winter is over. So it's a good time to bring out the salad recipes. Here, I propose a kale, pear, lentil and feta salad.
I like to add fruit to salads to add a little sweetness, as with the salad with apples and grapes. If you don't like sweet and salty, you can always use them.
Ingredients for kale, pear, lentil and feta salad:
- 3 kale leaves. If you don't have any, you can substitute Milan cabbage or rapini.
- 1 pear is important for this recipe, but you could leave it out. Or replace it with apples, but you'll lose the melt-in-the-mouth texture of the pear and some of the flavor.
- 1 small red onion, or shallot if needed.
- 100g maple walnuts, this time I used almonds and walnuts.
- '1 540 mL can of cooked lentils'1 540 mL can of cooked lentils
- 150 gr Cherry tomatoes
- 170 gr Feta cheese
The vinaigrette
I tried another vinaigrette for a change. But I think my classic vinaigrette will work just as well.
- 2 tablespoons lemon juice
- 2 tablespoons Dijon mustard
- 1 tablespoon maple syrup, honey may also work here.
- ¼ cup oil, I used grapeseed oil, but olive oil or rapeseed oil.
- salt and pepper to taste
This salad works equally well as a meal salad or starter. It's quite healthy and balanced, so it's a good choice for preparing for summer.
If you're vegan don't go away, you can replace the feta with a vegan feta faux-mage for a completely vegetarian recipe.

Ingredients
Salad
- 3 kale leaves
- 1 pear
- 1 small red onion
- 100 gr maple nuts (almonds and walnuts here)
- 1 540 mL can cooked lentils
- 150 gr cherry tomatoes
- 170 gr feta cheese
Vinaigrette:
- 2 tablespoon lemon juice
- 2 tablespoon dijon mustard
- 1 tablespoon maple syrup
- ¼ cup oil (in this case grapeseed, but can also be olive)
- salt and pepper to taste
Instructions
- Wash and drain the kale.
- Remove the stems and keep the leaves.
- Chop the leaves into medium-sized pieces.
- Quarter the pear, remove the center and cut each quarter into small slices.
- Finely chop the onion (or slice, as you prefer).
- Halve the cherry tomatoes.
- Cut the feta cheese into small cubes.
- Mix all ingredients in a large bowl.
- Prepare the vinaigrette by mixing all the ingredients in a bowl.
- Taste for yourself.
