This recipe with spaghetti squash, kale and walnuts is really surprising. Before starting, I was afraid it would be bland, but it turned out to be full of flavor.
The basis of the recipe is spaghetti squash. If this is your first time, I warn you that you're in for a real treat. Once baked, the flesh of this squash really does resemble spaghetti when flaked with a fork.
Cooking the squash is the longest part of the recipe, taking around 30 minutes in the oven. But don't worry, it's extremely easy to make.
This is a vegetarian recipe, but you can easily add your favorite proteins. You can also make a vegan version by substituting goat's cheese. However, goat's cheese is central to the recipe, so use at your own risk.
If you don't have kale, you can replace it with Swiss chard, which works very well.

Cooking spaghetti squash

- Brush squash flesh with olive oil and sprinkle with salt and pepper to taste.
- Place the squash halves on a baking sheet and bake for about 30 minutes.
- Once the squash is cooked, use a fork to fray the flesh, which should form strands like spaghetti.
- Make a reservation.
Maple-roasted walnuts
- Cut your walnuts into small pieces.
- In a bowl, combine walnuts and maple syrup.
- Place on a baking sheet, forming a single layer of nuts.
- Bake in the oven (at 400°F [200°C]) for about 10 minutes.

Remaining revenue
- Remove kale leaves from branch and cut into coarse pieces.
- Heat the olive oil in a frying pan, then add the garlic and cook for about 5 minutes over medium heat.
- Add the kale and cook for 2 minutes, stirring to coat all the kale with a little oil.
- Add 1 tablespoon of water and cover the pan with a lid to steam for 2 minutes.
- Remove lid and add spaghetti squash. Toss to combine.
- Add the goat cheese in small pieces and the walnuts.
- Add salt and pepper as required
- All that's left to do is enjoy.
Notes
For your goat's cheese, it's better to use a cheese that stays "hard" rather than one that "spreads". Both work in the recipe, but I only had a "soft" cheese for the photos. But I prefer the result with a "hard" cheese.
You can replace kale with Swiss chard without any problem.
