Description
Eggs are an ingredient that can be used in dozens of different ways. Since it's summer and the weather is hot, I'm going to suggest a fresh egg-based recipe, which is also a classic in Quebec: the egg salad sandwich.

- 6 hard-boiled eggs
- 1/4 cup (60 ml) chopped green onion (optional)
- 2-3 tablespoons (30 ml) mayonnaise
- 2 teaspoons (10 ml) Dijon mustard
- 1 gr (1/4 teaspoon) salt
- 0.5 gr (1/4 teaspoon) pepper
- 1 small shallot (or 1/4 red onion) (optional)
- 10 gr garlic flower (or 2 minced garlic cloves) (optional)
- 1 ciabatta baguette, you can also use sliced bread (approx. 8 slices)
Instructions
- Remove the shells from the eggs and chop coarsely in a bowl.
- In the same bowl, add the green onions, mayonnaise, mustard, salt, pepper, garlic flower and finely chopped shallot.
- Mix well.
- Cut your ciabatta bread in half.
- Spread about ½ cup (125 ml) egg filling in your bread.

Notes
If you're using sliced bread, toast it for the topping, which adds a nice crunch.
