Greek salad is an ideal option for a quick lunch, a meal on the terrace or a side dish for a barbecue. This salad is not only delicious, but also easy and economical to prepare.

Vinaigrette
- 45 ml (3 tablespoons) olive oil
- 30 ml (1 tablespoon) lemon juice
- 5 ml (1 tsp.) maple syrup (or sugar)
- 5 ml (1 tsp.) Dijon mustard
- 5 ml (1 tsp.) dried oregano

Salad
- 4 tomatoes, diced
- 1 cubed cucumber
- 1 yellow bell pepper, seeded and cubed
- 90 g (3/4 cup) diced feta cheese
- 80 g (1/2 cup) red onion, thinly sliced
- 1 tin of pitted black olives in oil, drained
Instructions
- In a salad bowl or large bowl, whisk together all the dressing ingredients.
- Add salad ingredients and mix well. Season with salt and pepper. Refrigerate salad until ready to serve.
