Description

Greek salad is an ideal option for a quick lunch, a meal on the terrace or a side dish for a barbecue. This salad is not only delicious, but also easy and economical to prepare.


Ingredients

  • Vinaigrette

    • 45 ml (3 tablespoons) olive oil
    • 30 ml (1 tablespoon) lemon juice
    • 5 ml (1 tsp.) maple syrup (or sugar)
    • 5 ml (1 tsp.) Dijon mustard
    • 5 ml (1 tsp.) dried oregano
  • Salad

    • 4 tomatoes, diced
    • 1 cubed cucumber
    • 1 yellow bell pepper, seeded and cubed
    • 90 g (3/4 cup) diced feta cheese
    • 80 g (1/2 cup) red onion, thinly sliced
    • 1 tin of pitted black olives in oil, drained

Instructions

  1. In a salad bowl or large bowl, whisk together all the dressing ingredients.
  2. Add salad ingredients and mix well. Season with salt and pepper. Refrigerate salad until ready to serve.
