Kale, pear, lentil and feta salad

Description

 Winter's over, so it's a good time to bring out the salad recipes. Here, I'm going to suggest a kale, pear, lentil and feta salad.


Ingredients

Units Scale

Salad

  • 3 kale leaves
  • 1 pear
  • 1 small red onion
  • 100 gr maple nuts (almonds and walnuts here)
  • 1 540 mL can cooked lentils
  • 150 gr cherry tomatoes
  • 170 gr feta cheese

Vinaigrette:

  • 2 tablespoon lemon juice
  • 2 tablespoon dijon mustard
  • 1 tablespoon maple syrup
  • 1/4 cup oil (in this case grapeseed, but can also be olive)
  • salt and pepper to taste

Instructions

  1. Wash and drain the kale.
  2. Remove the stems and keep the leaves.
  3. Chop the leaves into medium-sized pieces.
  4. Quarter the pear, remove the center and cut each quarter into small slices.
  5. Finely chop the onion (or slice, as you prefer).
  6. Halve the cherry tomatoes.
  7. Cut the feta cheese into small cubes.
  8. Mix all ingredients in a large bowl.
  9. Prepare the vinaigrette by mixing all the ingredients in a bowl.
  10. Taste for yourself.
