Kohlrabi, apple and grape salad

It's summer, which means it's salad season. Quebec winters being what they are, I tend to favor hearty dishes during this period. But once summer arrives, it's very hot in Montreal and a fresh dish is more than welcome. Here's an example of a salad mixing vegetables and fruit: Kohlrabi, apple and grape salad.

The research for this recipe didn't take very long. We had ordered a basket of vegetables from local farmers and didn't know in advance what was in the basket. So, for the first time, I found myself with a kohlrabi to cook.

So I took a look at the combinations that worked with kohlrabi in salads. Grapes came up regularly, so that was my basis for the recipe. All that remained was to find one or two other ingredients and a suitable vinaigrette, and that was it.

Here's my recipe for kohlrabi, apple and grape salad. You can always add walnuts (walnuts or almonds) for a little extra texture and protein.

Kohlrabi, apple and grape salad

Description

A great fresh salad that mixes fruit and vegetables!


Ingredients

Scale

1 kohlrabi, peeled and thinly sliced

60 ml (¼ cup) lemon juice

0.5 ml (⅛ tsp.) salt

1 apple, cored and diced (or cut into sticks)

60 gr (2 cups) arugula (or bitter-sweet lettuce)

65 gr (½ cup) seedless grapes, halved

30 gr (¼ cup) pecorino or parmesan cheese shavings

30 ml (2 tablespoons) olive oil

15 ml (1 tablespoon) white wine vinegar

¼ red cabbage (optional)

1 2 diced tomatoes (optional)

50 gr walnuts (optional)


Instructions

Place kohlrabi slices in a bowl. Drizzle with half the lemon juice and sprinkle with salt.

Mix and marinate for about 15 minutes.

In a large bowl, combine apple and remaining lemon juice. Drain excess juice.

Drain the kohlrabi slices and add to the apple.

Add remaining ingredients.

Notes

This is a good salad base to which you can add other ingredients such as red cabbage or tomatoes. 

For a vegan version of this recipe, you can replace the pecorino with a faux-mage cheese.

For protein, you can add nuts. I prefer walnuts for this salad, but almonds or cashews can also do the trick.
