Foccacia with herbs

Ingredients

  • 500 gr flour
  • 30 cL water
  • 8 cL oil
  • 10 gr baker's yeast
  • 12 gr of salt
  • 1 teaspoon sugar
  • 1 pinch of coarse salt
  • 2 tablespoons dried oregano
  • 1 tablespoon dried basil
  • 1 tablespoon rosemary

Instructions

  1. In a large bowl, combine the flour, salt, sugar, instant dried yeast and herbs.
  2. Add the lukewarm water and olive oil and stir until all ingredients are well incorporated.
  3. Knead the dough for about 10 minutes until smooth and elastic.

  4. Leave the dough to rest in a warm, dry place for about an hour, or until it doubles in volume.
  5. Preheat your oven to 220°C and grease an ovenproof dish with olive oil.
  6. Once the dough has doubled in volume, roll it out in the ovenproof dish.
  7. Drizzle the dough with olive oil and lightly press your fingers into the dough to create small holes.
  8. Sprinkle the dough with a little extra salt and a few herbs for added flavor.
  9. Place the focaccia in the oven for about 20 minutes, or until golden and crisp.
  10. Remove the focaccia from the oven and leave to cool for a few minutes before cutting into pieces.
  11. Serve warm or at room temperature, as you prefer.

Notes

You can knead in a food processor, which works very well.
