Apple Compote

Applesauce is a very simple thing to make. All you need is apple water and a blender. It's a far cry from supermarket compotes with their endless lists of ingredients. Here's my recipe for homemade applesauce.

I used to eat a lot of compotes when I was a kid (Andros, Andros, that's a lot of fruit). There were strawberry-apples, pear-apples and of course "just" apples, my favorites. After that, I ate apples directly, perhaps influenced by the European Union's "While you have teeth, eat apples" campaign, and I said goodbye to compotes for a while.

Recently, when I became interested in pastry-making VeganI learned that applesauce could be an alternative to eggs as a texture agent in certain recipes. That's when I decided to make my own compote. It was one of the bases for making a vegan crème frangipane (coming soon to the blog!).

The recipe I'm giving you here is for a compote to be eaten straight away, as a dessert. If you wish to make the compote to use in another recipe, I recommend that you omit the lemon juice and maple syrup.

Apple Compote

Description

A perfect compote for a small dessert or as a base for pastries. vegan.


Ingredients

Scale

125 mL (½ cup) water

4 medium-sized apples (approx. 1L or 4 cups)

juice of half a lemon (optional)

2 tablespoons maple syrup (optional)


Instructions

  1. Prepare the apples by cutting them into pieces and removing the seeds.
  2. In a saucepan, bring the water and apples to the boil.
  3. Add maple syrup and lemon juice (optional).
  4. Simmer for 10 minutes or until apples are soft.
  5. Using a stand mixer or blender, puree the apple mixture. 
  6. Chill for about 2 hours in the fridge.
  7. Enjoy!

Notes

It's important to keep the peel on the apples so that your compote has a nice pink color. However, if you don't blend enough, you risk getting bits of peel in your compote. I don't mind this, but if you want to avoid it, you can strain the apples to remove the skins.

If you prefer a "yellow" compote. Remove the skin before cooking the apples.
