Apple Compote

Description

A perfect compote for a small dessert or as a base for pastries. vegan.


Ingredients

Scale

125 mL (1/2 tasse) d'eau

4 medium-sized apples (approx. 1L or 4 cups)

juice of half a lemon (optional)

2 tablespoons maple syrup (optional)


Instructions

  1. Prepare the apples by cutting them into pieces and removing the seeds.
  2. In a saucepan, bring the water and apples to the boil.
  3. Add maple syrup and lemon juice (optional).
  4. Simmer for 10 minutes or until apples are soft.
  5. Using a stand mixer or blender, puree the apple mixture. 
  6. Chill for about 2 hours in the fridge.
  7. Enjoy!

Notes

It's important to keep the peel on the apples so that your compote has a nice pink color. However, if you don't blend enough, you risk getting bits of peel in your compote. I don't mind this, but if you want to avoid it, you can strain the apples to remove the skins.

If you prefer a "yellow" compote. Remove the skin before cooking the apples.
