Vegetarian burritos

The burrito has become a classic in many restaurants. I often order them for brunch in restaurants that offer breakfast burritos. So I had to try my own version of this recipe. Here are my vegetarian burritos.

If you didn't already know, the burrito is a Mexican recipe. It's a type of cuisine I'm very fond of, as you've already seen with the enchiladas or the Mexican one-pot pasta.

Ingredients for vegetarian burritos

Fake meat

For this recipe, I opted for a faux-meat blend with walnuts, black beans and Mexican spices.

If you want a simpler solution, you can use Mexican-flavoured meatless or burger patties. vegan crumbled. This will also work.

The filling for my vegetarian burritos

In this vegetarian burrito recipe, I used salad, black beans, brown rice, salsa, guacamole, bell bell pepper and cheese as fillings. Adding the "faux meat" to this makes for a filling burrito. I also like to add a little cilantro and lime juice, but that's optional.

For salsa and guacamole, you can choose to buy them commercially or make them yourself.

Folding vegetarian burritos

This is often a problem when making homemade burritos, managing to make something that can be eaten without running all over the place.

Good folding is essential to avoid getting it all over the place. If that happens to you, you can always end up with a fork.

Vegan burrito recipe

This recipe can easily be made into a Vegan. Simply replace the cheese with a "false magus".

I've heard that malted yeast can also be a good replacement to bring back the taste of cheese.

You can also totally remove it from the recipe, if you do, let me know if the recipe lacks something, I'll try to find you an alternative to keep a beautiful recipe.

Ingredients

"Fake walnut meat

  • 1 cup walnuts
  • 2 tablespoons olive oil
  • 2 tablespoons water
  • 1 small onion, thinly sliced
  • 3 garlic clove, minced
  • 3 tablespoons soy sauce
  • ½ teaspoon chipotle powder
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon pepper
  • 1 450 mL can cooked black beans

Vegetarian Burritos

  • 8 large corn tortilla (ideally whole wheat)
  • 250 gr cooked brown rice
  • 250 ml salsa
  • 250 ml of guacamole
  • 200 gr grated cheese
  • 1 red bell pepper, diced
  • ½ lettuce
  • Sour cream (Optional)
  • juice of 1 lime (Optional)


Instructions

  1. In a blender, add the walnuts, a tablespoon of oil and two tablespoons of water.
  2. Blend until finely chopped.
  3. In a saucepan over medium heat, add a tablespoon of oil.
  4. Once the pan is hot, add the onion and garlic and cook for about 5 minutes.
  5. Add the chopped mixture to the blender and blend.
  6. Add soy sauce, chipotle powder, garlic powder, paprika, cumin and pepper.
  7. Add the black beans and stir for 5 minutes.
  8. Taste and check seasoning.
  9. Make a reservation.

Burritos

  1. Reheat tortillas in a chause pan or in the microwave, for about 15 seconds. The aim is to make them soft and warm for eating. Set aside.
  2. For each burrito, place the ingredients layer by layer in the following order:
    1. Tortilla
    2. Rice
    3. "Fake nut meat
    4. Lettuce
    5. Cheese
    6. Salsa
    7. Guacamole
    8. (Optional) Sour cream
    9. (Optional) Lime juice
  3. Fold your burrito (see the video in the article if you don't know how).
  4. Place the closed burrito in a frying pan over medium heat with a little oil. Heat for 2 to 3 minutes on each side.
  5. Repeat for all burritos
  6. Enjoy!

Notes

The recipe is also available in vegan using cheese vegan instead of normal cheese.
