They add a welcome crunch. The recipe is easy to make and can be stored in the freezer. It's something I recommend to avoid realizing when you have to put the choux in the oven that you've forgotten to make the cracker.  It's a true story.<\/p>\n\n\n\n<p>To get a nice, even cracker, make sure you cut a regular circle with your cookie cutter. Make the circle the same diameter as the choux you'll be poaching. Leftover cracker dough can easily be used (as in the image below, you can see that I'm using leftovers on one of the choux). If you feel like it, you can also make them for \u00e9clairs or other choux pastry-based recipes. If you've never heard of it, it's quite simple to make.
