Traditionally associated with the town of M\u00e2con, goug\u00e8res are considered an emblematic dish of Burgundian cuisine. <\/p>\n\n\n\n<p>Their origins date back to the Middle Ages, when monks in the region's monasteries began experimenting with choux pastry, a key ingredient in goug\u00e8res. <\/p>\n\n\n\n<p>Originally, these little cheese puffs were often served during religious or festive celebrations. My favorite for goug\u00e8res is Comt\u00e9, but other cheeses such as Gruy\u00e8re or Emmental are also often used.<\/p>\n\n\n\n<p>Unfortunately, if you live in Canada like I do, these cheeses aren't available everywhere and are often expensive. So I tend to use parmesan, gouda or extra sharp cheddar.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Goug\u00e8res are salted cabbages<\/h3>\n\n\n\n<p>As with baking sweet choux pastry, there are a few rules to follow.<\/p>\n\n\n\n<p>Do not open the oven during baking. This may cause the oven temperature to drop and your goug\u00e8res to deflate, which is impossible to reverse.<\/p>\n\n\n\n<p>You'll need to keep an eye on them through the oven window. Make sure your goug\u00e8res are golden brown and puffed up before you take them out. Simply add them to the recipe at the same time as the cheese.<\/p>\n\n\n\n<p>Another variation is to stuff the goug\u00e8res, as with cream puffs. For this, I recommend a mornay sauce, which I tried at Foxy's in Montreal and which was delicious, or another cheese sauce. Once the goug\u00e8res are ready, you can either cut them in half for filling, or fill them from the bottom using a piping bag.<\/p>\n\n\n\n<p>Remember to warm them up a little in the oven before id=\"instruction-step-1\">Preheat oven to 190\u00b0C (375\u00b0F). Line two baking sheets with parchment paper.<\/li>\n<li id=\"instruction-step-2\">Pour the milk, water and chopped butter into a saucepan. Place over high heat.<\/li>\n<li id=\"instruction-step-3\">Bring to the boil, reduce heat to medium, then pour in all the \"powders\" (flour, salt, sugar) at once.<\/li>\n<li id=\"instruction-step-4\">Mix over medium heat for about 5 minutes. The aim is to dry out the dough as much as possible.<\/li>\n<li id=\"instruction-step-5\">Pour the dough (which should form a more or less uniform ball) into the bowl of your food processor or a large salad bowl.<\/li>\n<li id=\"instruction-step-6\">Knead the dough (using the food processor's flat beater or a wooden spoon), adding the eggs one at a time.<\/li>\n<li id=\"instruction-step-7\">Stir in finely grated cheese.<\/li>\n<li id=\"instruction-step-8\">Place the choux pastry in a piping bag and pipe 3-7 cm rounds onto a baking tray lined with baking paper. If you don't have a piping bag, use a spoon.<\/li>\n<li id=\"instruction-step-9\">Place the baking sheet in the oven for 25 to 40 minutes (depending on the size of your choux).<\/li>\n<li id=\"instruction-step-10\">Once the choux are golden brown, remove from the baking sheet and leave to cool before serving.<\/li>\n<\/ol>\n\t\t<\/div>\n\t<\/div>\n\t\n\t\n\t\t\n\t\n\t\t\t<div class=\"tasty-recipes-notes\" data-tasty-recipes-customization=\"secondary-color.background-color\">\n\t\t\t<h3 data-tasty-recipes-customization=\"h3-color.color h3-transform.text-transform\">Notes<\/h3>\n\t\t\t<div class=\"tasty-recipes-notes-body\" data-tasty-recipes-customization=\"body-color.color\">\n\t\t\t\t<p>During cooking, it's very important not to open the oven door. If you open it too early, the choux will fall back and you won't be able to catch up.<\/p>\n<p>Try to keep the same size of choux on the different trays.
