I love rum. I'd even say it's my favorite spirit. I rarely drink it on its own, more often as a small punch, but I also like to drink it as an arranged rum. I've tried several homemade ones, and my current favorite is mango rum.
It's best drunk as an after-dinner drink, but you can also serve it as an aperitif, especially if you sweeten it well.
What is rhum arrangé
Le rhum arrangé est une préparation à base de rhum blanc plus généralement dans laquelle vont macérer des ingrédients comme des fruits, des épices, des feuilles, des écorces ou encore des herbes.
Le rhum arrangé s’obtient grâce à la technique de la macération. Elle doit être longue afin que le rhum s’imprègne de tous les arômes.
Le rhum arrangé est une boisson alcoolisée emblématique de la Réunion et des Antilles françaises. Selon sa région, ses traditions, chaque culture prépare son rhum arrangé à sa façon. Il n'y a donc pas de véritable recette, mais on retrouve souvent les mêmes grands principes. Les recettes traditionnelles sont souvent transmises de génération en génération au sein de la famille.
Ingredients for Mango Arranged Rum
For a mango rhum arrangé, the ingredient list is very simple: rum and mango.
However, the result is often very strong, which is why I like to add one or two sugars. This brings out the aromas a little and, above all, softens the blend, making it easier to drink.
Finally, I like to add a few vanilla pods, which add a little something really pleasant in the mouth.

Maceration time
Le temps de macération est un sujet qui revient souvent lorsque l’on parle de rhum arrangé. Pour la plupart des rhums arrangés, on recommande une durée de 3 mois. Mais cela varie selon plusieurs paramètres, dont les fruits que vous utilisez.
It's difficult to have a perfect answer, so it's advisable to start tasting it after 2 months and leave it to macerate until the taste suits you. I personally taste them every 2 weeks after two months' maceration.
The longest maceration time for fruit is often around 6 months, and I rarely see any difference in the flavors of the rum after this time. If you want to increase the mango flavor, you can remove the old mangoes and add new ones. But you'll have to wait several months again for maceration.

Description
A recipe for mango arranged rum, perfect as an aperitif or digestif.
Ingredients
- 800 ml white rum
- 2 vanilla beans
- 1 ripe mango
- 25 millilitres cane sugar syrup
Instructions
- Peel and cut mango into pieces
- Split the vanilla pod in half.
- Pour the rum and cane sugar syrup into a bottle or large glass jar, then add the vanilla pod and mango pieces.
- Close the container and leave to macerate for 3 months.
- You can enjoy the rum as it is, or strain it to remove all the vanilla pods and mango pieces. It depends on whether you want to continue the maceration or stop it.
Notes
Pay attention to the size of your container. The result is about 850 mL of rhum arrangé, but with the volume of the mango, you'll need a container of about 1L, or a little more depending on the size of your mango.
