Spaghetti squash, kale and walnuts

Description

A simple, flavorful recipe with spaghetti squash, kale and walnuts.


Ingredients

Scale

1 spaghetti squash

3 teaspoons olive oil

Salt and pepper

1 tablespoon olive oil

4 garlic cloves, minced

1 large bunch of kale

1/2 teaspoon salt

150 gr goat's cheese

100 gr chopped walnuts

2 teaspoons maple syrup


Instructions

Cooking spaghetti squash

  1. Preheat oven to 400°F (200°C)
  2. Cut squash in half lengthwise. Be sure to use a good knife, as this type of squash is often difficult to cut. And be careful not to hurt yourself.
  3. Empty the inside of the squash, leaving no seeds or filaments.
  4. Brush squash flesh with olive oil and sprinkle with salt and pepper to taste. 
  5. Place the squash halves on a baking sheet and bake for about 30 minutes.
  6. Once the squash is cooked, use a fork to fray the flesh, which should form strands like spaghetti.
  7. Make a reservation.

Maple-roasted walnuts

  1. Cut your walnuts into small pieces.
  2. In a bowl, combine walnuts and maple syrup.
  3. Place on a baking sheet, forming a single layer of nuts.
  4. Bake in the oven (at 400°F [200°C]) for about 10 minutes.
  5. Book

Remaining revenue

  1. Remove kale leaves from branch and cut into coarse pieces.
  2. Heat the olive oil in a frying pan, then add the garlic and cook for about 5 minutes over medium heat.
  3. Add the kale and cook for 2 minutes, stirring to coat all the kale with a little oil.
  4. Add 1 tablespoon of water and cover the pan with a lid to steam for 2 minutes.
  5. Remove lid and add spaghetti squash. Toss to combine.
  6. Add the goat cheese in small pieces and the walnuts.
  7. Add salt and pepper as required
  8. All that's left to do is enjoy.

Notes

For your goat's cheese, it's better to use a cheese that stays "hard" rather than one that "spreads". Both work in the recipe, but I only had a "soft" cheese for the photos. But I prefer the result with a "hard" cheese.

You can replace kale with Swiss chard without any problem.
