Description

Today I'm sharing a new anti-waste recipe with you: carrot and sweet potato peel cake, an anti-waste recipe.


Ingredients

Units Scale
  • 250 gr peelings (carrot and/or sweet potato)
  • 250 gr flour
  • 17 gr baking powder (baking powder)
  • 150 gr grated sharp cheddar (or Emmental) cheese
  • 5 eggs
  • 185 gr milk (or oat milk)
  • 150 gr olive oil
  • 7 gr of salt
  • 1 tablespoon thyme.

Instructions

  1. Place all the dry ingredients (flour, baking powder and salt) in the bowl of a food processor.
  2. Add liquid ingredients (cheese, egg, milk, olive oil).
  3. Whisk together at medium speed.
  4. Add the peelings and thyme.
  5. Mix well.
  6. Prepare a cake tin, greasing it with butter and flour so that it doesn't stick when unmolded.
  7. Fill the mould with the mixture.
  8. Bake for 35-45 minutes at 170 degrees Celsius (or 370 degrees F)
