Today I'm sharing a new anti-waste recipe with you: carrot and sweet potato peel cake, an anti-waste recipe.

- 250 gr peelings (carrot and/or sweet potato)
- 250 gr flour
- 17 gr baking powder (baking powder)
- 150 gr grated sharp cheddar (or Emmental) cheese
- 5 eggs
- 185 gr milk (or oat milk)
- 150 gr olive oil
- 7 gr of salt
- 1 tablespoon thyme.
Instructions
- Place all the dry ingredients (flour, baking powder and salt) in the bowl of a food processor.
- Add liquid ingredients (cheese, egg, milk, olive oil).
- Whisk together at medium speed.
- Add the peelings and thyme.
- Mix well.
- Prepare a cake tin, greasing it with butter and flour so that it doesn't stick when unmolded.
- Fill the mould with the mixture.
- Bake for 35-45 minutes at 170 degrees Celsius (or 370 degrees F)
